- 40 g cheddar cheese, grated
- 225 ml flour, sifted
- 36 g (1 sachet) Knorr three cheese sauce
- 2 eggs
- 125 ml buttermilk
- 30 ml fresh parsley, finely chopped
- 1 avocado, finely diced
- red onion, finely chopped
- 2 tomatoes, finely chopped
- lime, juiced
- 1 small red pepper, diced
- 500 ml frozen corn (thawed)
- 2 small carrots, peeled and grated
- 2 medium baby courgettes (baby marrows), grated
- 45 ml oil (for frying)
- 125 ml Parmesan cheese, grated
- 1 ml Robertsons freshly ground black peppercorns
