- 750 ml cooked, wild rice
- 1 small bunch kale
- olive oil for frying
- Robertsons Atlantic sea salt, to season
- Robertsons ground black peppercorns, to taste
- 5 baby courgettes (baby marrows), sliced
- 4 x chicken breast fillets lightly beaten with a meat mallet to tenderise
- 125 ml Knorr balsamic and pineapple vinaigrette salad dressing
- 50 ml water
- 30 ml olive oil for dressing
- 1 lemon finely grated zest
- 30 ml lemon juice
- 5 ml honey
- 40 g baby spinach
- 40 g rocket
- 1 handful of fresh Italian parsley
- 1 handful of fresh basil
- 2 x medium-sized avocados
- 60 ml toasted pumpkin seeds
