- 1/2 cup vegetable oil
- 1 onion finely chopped
- 2 tbsp Rajah Mild & Spicy curry powder
- 2 cloves garlic crushed
- 1 x 5 cm piece fresh ginger root grated
- 2 ripe tomatoes grated
- 1 tbsp tomato paste
- 1 kg chicken portions
- 1 1/2 cups boiling water
- 8 - 10 small potatoes peeled and quartered
- 2 cups boiled basmati rice to serve
