Roasted Tomato, Aubergine and Feta Bake

- 4 medium aubergines halved lengthways
- 30 ml olive oil
- 1 red onion finely chopped
- 2 red peppers finely chopped
- 400 ml water
- 15 ml Robertsons ground cumin
- 7.5 ml Robertsons ground coriander
- 100 g feta cheese crumbled
- 1 packet (48 g) Knorr tomato base dry cook-in-sauce
- 100 g toasted flaked almonds
- fresh coriander to serve
