Fried Chicken Mayo with Breadcrumbs

These delicious fried chicken breasts are dunked delectably in spices and the hero of the dish, Hellmann’s Mayonnaise. The mayo mixture marinates the chicken breast and allows the flavour to penetrate into the chicken before coating with crumbs and frying to perfection.
To make the mayo sauce for chicken simply add ½ cup of Hellmann’s mayo into a bowl and mix with a few squeezes of lemon juice, two teaspoons of Robertson’s crushed garlic, 10g of finely chopped rosemary, and salt and pepper to taste.

Take six skinless chicken fillets and roll into the mayonnaise mixture first and then lay down on a large baking tray. Pour whatever mixture is left over the coated fillets. Cover up and allow to marinade in the fridge for 2 – 3 hours. Then take a cup of breadcrumbs (which have been seasoned with Robertson’s Italian herb mix) and coat the fillets in the breadcrumbs so that they are generously coated. The breadcrumbs should stick well to the chicken fillets because they have been generously coated in the mayo sauce.

Fry the fillets on a medium heat in a frying pan with a little bit of vegetable oil in. Each fillet should take between 7 – 10 minutes to cook through.
